If you are looking for a super satisfying spicy delicious caserole and you love aubergines/eggplant… then this recipe is going to tick all the boxes.
2 medium aubergines/eggplant, diced
2 courgettes/zuchinni, diced
1 large carrot, diced
2 red bell peppers, chopped
3 red onions, quartered
2 jars of your favorite (healthy) organic pasta sauce
mozzarella (optional) sliced
1-2 tsp. red pepper flakes (or more it you love it hot)
1-2 cups of Spicy Nut Meat
1. Throw everything together in a caserole pan and cook with the lid on.
2. Bake at 175C/350F for at least an hour.
3. Optional: Add the mozzearella and bake for an additional 10 minutes with the lid off.
4. When you serve up each portion top off with additional Spicy Nut Meat.
