This simple summer salad shines when little bits of fresh pineapple are added. Give it a try.
1 red cabbage, shredded
4 carrots, grated
1 red onion, finely chopped
1 bunch of corriander/cilantro, finely chopped
2 tablespoons currants
2 tablespoons sesame seeds
Optional: fresh pieces of pineapple
Blend the following ingredients in a blender:
2 tablespoons coconut aminos or soy sauce
2 tablespoons tahini
juice of one lemon
1 clove garlic
thumb sized piece fresh ginger
1. Assemble the salad and mix well with dressing.
2. It works well to make the salad ahead of time and let the flavors marinate and blend a bit before serving.
