Salad in a jar is a fabulous way to be prepared with a busy on-the-go lifestyle. Make up several jars when you batch cook on the weekend and have them on hand through out your busy week. In air-tight canning jars, the salad stays fresh and crispy and takes up minimal space in the fridge.
Start by roughly peeling off the skin (leaving some green bits). Use a fork and drag it from top to bottom pressing in to leave fork tracks/grooves (turning so you repeat this all around the outside of the cucumber). This makes for a pretty rippled edge design and looks nice when in the jar.
Make up a big batch of crunchy crispy veg so if you get a snack attack it is there waiting for you. Use for picnics or work day lunches and even better yet…waiting for you at the end of a busy day so all you have to do is add to a bowl of lettuce.
