This delicious summer soup can be prepared in a snap. Make it in the blender and if you have a high powered blender you can just let the motor run for about 5 minutes and it will heat up the soup to warm without killing the enzymes. This raw soup is loaded with nutrients and to add a little zip, try using some red hot chili peppers or try harissa (chili relish).
4-6 plump ripe tomatoes
1 large sweet red bell pepper
1 large orange bell pepper
1tsp – T harissa chili relish (or red hot chili pepper, pepper flakes or jalepeno to taste depending on how hot you like it)
salt to taste
1. Blend on high.
2. Garnish with fresh cilantro/coriander.
