What is a paleo chip you might ask. Well in this case the paleo chip is made from the root vegetable rutabaga. It is a cruciferous veg also called swede. This is a simple and very satisfying dinner: Pan fried lamb chops on low heat with a tsp. of coconut oil in the pan. Cook with the lid on and turn it about every 2-3 minutes.
The fries below are made from Swedes/rutabaga. Peel and cut into fries. Use 50/50 coconut oil and hot water and blend. In a big bowl toss uncooked fries with the coconut water and add salt and garlic salt.
Spread on a cookie sheet and bake at 175C/350F for 25 minutes.
Great served with steamed until soft and then butter baked Brussel Sprouts until a little browned.
