Hot and sweet ginger chicken is so incredibly good, it makes me want to lick my plate clean! Serve over quinoa or rice and/or with sauerkraut on top. String beans or steamed broccoli are also a nice compliment.
Marinate chicken for several hours or overnight in this sauce and then bake at 175 C /350 F for at least 1 hour (longer if you want it to be more tender).
You can use skinless boneless cut up chicken breasts or thighs with the skin on. Either option is great.
Hot & Sweet Ginger Chicken Sauce
juice of 3 limes
juice of 1 lemon
2 heaping tablespoons of honey
2 generous pinches of red pepper flakes (more if you like)
1 whole large knob of ginger grated
1 T curry powder
2 T sesame seeds
salt to taste
